The preparation of caponata dates back to the Arabs. Olives, tomatoes, and onion here are merely subjects of one true queen: the eggplant. It is recommended to enjoy it as a side dish or on shortcrust pastry baskets as an appetizer.

Ingredients: Eggplant (60%), triple-concentrated tomato paste, extra-virgin olive oil, green olives, onion, capers, celery, vinegar, sugar, sunflower seed oil, salt.
