Sicilian caponata of aubergines and capers
The Sicilian caponata is a mix of all Sicilian flavors and aromas.
Ingredients:
Peeled tomato, aubergines, peppers, celery, onion, pitted green olives, capers, almonds, extra virgin olive oil, pine nuts, raisins, sunflower oil, red wine vinegar, sugar, garlic, pepper, salt.
Processing:
After having carefully washed all the vegetables, the aubergines are cut into cubes and left to soak in water and salt for a few hours. They are then grilled, sautéed in another pan and the peppers cut into fillets are added.
In another pan the sauce is cooked with capers, olives, almonds, pine nuts and pepper.
Finally, aubergines and peppers and extra-virgin olive oil are added.
