There are 37 variations of Caponata in Sicily, depending on the area,
but they all include diced and sweet and sour vegetables.
Starting from the traditional recipe from Palermo, we have developed this preserve which makes Caponata a cream, excellent for spreading or accompanying cheeses, first and second courses.
Ingredients
Aubergines (60%), triple tomato concentrate, extra virgin olive oil,
green olives, onion, capers, celery, vinegar, sugar, sunflower oil, salt.
