Following traditional methods, through salting and time, the black olives, once matured in brine for a few months, are chopped with extra virgin olive oil.

Black olive pâté is recommended on bruschetta and pasta dishes to enhance sauces, but is also excellent mixed with soft cheese and on stale bread.
