Green olive pâté is made from olives, previously matured in brine for a few months, which are chopped with the addition of extra virgin olive oil. An excellent pâté for seasoning bread bruschetta and dry pasta. For second courses it is also suitable for boiled and roasted fish, because it enhances its flavour.
