Perripò Perricone
A powerful, versatile wine, pure Perricone, a black grape variety long neglected, now more than ever re-evaluated. The result of a hand harvest during the last ten days of September and a maceration and fermentation of at least 15 days at a temperature of about 25 degrees; it then ages for 6 months in steel tanks, followed by an additional period of 3/6 months in the bottle. Rich in red fruit, mixed with a hint of licorice typical of the varietal expression, Caruso & Minini's Perripò is represented on the label with borage flowers to define the perfect synthesis between tradition that lasts over time and modernity.
Both the name and the label were created in collaboration with Laboratorio Zanzara, promoting social inclusion.

The nose is enveloping, rich in red fruit, mixed with a hint of licorice typical of the varietal expression. - Taste
On the palate, soft and velvety but at the same time tannic. The finish is long and persistent.
How to taste it
Pairings
It prefers difficult pairings such as with pesto alla trapanese, but reaches its peak of elegance when accompanying tuna or swordfish; it also pairs well with savory pies, cured meats, and aged cheeses.
