Pasta alla Norma is one of the symbols of Sicilian cuisine, a Mediterranean dish prepared with pasta—traditionally macaroni—seasoned with tomato sauce, fried eggplant, salted ricotta cheese, and basil.

The origin of the recipe is attributed to Catania, where Norma is considered a true gastronomic emblem, although variations of pasta with eggplant sauce were already common throughout Southern Italy even before its codification.

The name seems to recall the opera Norma by Vincenzo Bellini, a great composer from Catania. The most well-known tradition tells that the playwright Nino Martoglio, upon tasting the dish, exclaimed: "It's a Norma!", comparing its deliciousness to the famous opera. Another version maintains that the recipe was perfected precisely during the celebrations for Bellini's new opera, as a tribute to the master.

In addition to pasta, pizza alla Norma is also very popular in Sicily, with the same ingredients. A National Day is also dedicated to this traditional masterpiece, celebrated every year on September 23rd.
