Pasta alla Norma is one of the symbols of Sicilian cuisine, a Mediterranean dish made with pasta — traditionally macaroni — dressed with tomato sauce, fried eggplant, salted ricotta, and basil.

The recipe is attributed to Catania, where Norma is considered a true gastronomic emblem, although variations of pasta with tomato sauce and eggplant were widespread throughout southern Italy even before the recipe was formally codified.

The name seems to refer to the opera Norma by Vincenzo Bellini, the great composer from Catania. The best-known tradition recounts that the playwright Nino Martoglio, after tasting the dish, exclaimed, “It’s a Norma!”, comparing its deliciousness to the celebrated opera. Another version holds that the recipe was perfected specifically for celebrations of Bellini’s new opera, as a tribute to the maestro.

In addition to pasta, pizza alla Norma, made with the same ingredients, is also very popular in Sicily. A National Day, celebrated every year on September 23, is also dedicated to this masterpiece of tradition.
